Crispy chicken breasts, rich marinara sauce, and gooey melted cheese all nestled in a warm sub roll – it’s simply irresistible. Every bite feels like a comforting hug, making it the perfect meal for any night of the week.

Before You Start

  1. Pound the Chicken: Pound the chicken breasts to an even ¼ inch thickness. This helps them cook evenly and quickly.
  2. Season Well: Season the chicken with salt and pepper before dredging. This step enhances the overall flavor of the dish.

First things first, preheat that oven to 400°F (200°C). While it’s getting hot, line up some parchment paper and grab a meat mallet. You’re gonna pound those chicken breasts until they’re about ¼ inch thick. This speeds up cooking and makes everything tender.

Flour, Egg, and Breadcrumbs

Season the 4 chicken breasts with salt and pepper. Dredge each breast in 1 cup of all-purpose flour, dip into 2 beaten eggs, and coat with a mixture of 2 cups of panko breadcrumbs, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon Italian seasoning.

Fry the Chicken

Assemble the Subs

Place 4 split sub rolls on a baking sheet. Spread a thin layer marinara sauce on the bottom half of each roll. Place a fried chicken breast on top of the sauce on each roll. Spoon more marinara sauce over the chicken. Lay 2 slices of mozzarella cheese over the sauce on each sub, and sprinkle with ¼ cup grated Parmesan cheese.

Bake the Subs
