Easy Ranch Pork Chops And Potatoes Recipe

These Ranch Pork Chops are a favorite recipe in my house and on the blog. It’s an easy dinner, full of delicious flavor and made all on one sheet pan. The great thing about this recipe is that you don’t require a lot of ingredients, or a trip to the grocery store to pick up some special ingredients. Chances are you already have everything you need.

 What Is A Sheet Pan Dinner?

Sheet pan dinners are super simple, all you have to do is season your meat and potatoes, set it and forget it. You all know my love for one pot dinners and that extends to sheet pan dinners. You’re going to be able to develop so much flavor cooking both of these at the same time on the same pan, which is what we’re trying to achieve with this dish. Seriously guys, dinner never got easier than with these chops.

Why You’ll Love These Ranch Pork Chops And Potatoes

  • One-Pan Wonder! This is a delicious pork chop and potato dinner that takes just one pan and 35 minutes to make with barely any prep or cleanup involved!
  • Ranch Dinner Delicious! When you add some herby ranch seasoning to meat and potatoes it’s OMG good! But then add a dash of smoked paprika to the ranch mixture and it becomes incredible. 
  • Easy Weeknight Meal! This quick and easy recipe is not only a great weeknight meal but one that you can prep up to 2 nights ahead of time before cooking.

Ingredients You’ll Need

  • Olive oil – We want a neutral tasting oil to drizzle over our meat and potatoes.
  • Ranch – You’ll need ranch dressing mix in this recipe, believe me it will deliver a flavor bomb. You can use store-bought or make your own, using my simple recipe here.
  • Spices – Smoked paprika, dry oregano, and black pepper are my spices of choice, but feel free to use your favorite.
  • Pork – We’re using pork chops today. Either boneless or bone in will work.
  • Potatoes – We’re roasting up baby potatoes today, regular sized potatoes won’t roast up as quickly or as well, just make sure to cut them in equal pieces.
  • Parsley – It wouldn’t be a Jo Cooks recipe without this herb sprinkled generously on top!

How To Make Ranch Pork Chops And Potatoes

Sheet pan dinners are the best invention ever! It’s like a one-pot meal made in the oven. With this ranch pork chops recipe, once the chops and potatoes are seasoned it takes just 30 minutes to roast and have dinner on the table!

Preheat The Oven And Prep The Pan

To begin, you need to preheat your oven to 400°F (204°C) so that it is hot and ready to go for your chops and potatoes. Then spray a sheet pan with nonstick cooking spray.

Prep The Chops And Potatoes

Before seasoning, you need to prep the pork and potatoes. So lay them on the prepared baking sheet evenly spaced apart. Now, drizzle the chops and potatoes with olive oil and toss them well to fully coat. You can also do this in a bowl, but if you don’t want to dirty a bowl you can do it all on the sheet pan.

Make The Rub And Season

To make the rub, combine the ranch seasoning mix, smoked paprika, oregano, and black pepper in a small bowl. Now, rub the mixture evenly over the chops and potatoes. Also, the rub is already pretty salty so I don’t add extra salt, but you can if you like. As you can see I did mine in a bowl, but not necessary.

Roast The Pork And Potatoes

Now that everything is perfectly seasoned, it’s time to roast! So pop the sheet pan into the preheated oven and bake the chops and potatoes for about 30 minutes or until the pork is fully cooked and the potatoes are fork tender. Note, this is the average time this dish takes to cook. All ovens vary, so some may roast the pork faster and others slower. In terms of food safety, pork is considered done when the internal temperature of the meat shows that it has reached 145°F (63°C) when you check it using a meat thermometer.

Serve

When the sheet pan dinner is finished cooking, transfer the chops and potatoes to your favorite dish. Then garnish with freshly chopped parsley and serve immediately to enjoy!

Expert Tips

  1. If you don’t have baby potatoes on hand, Yukon gold potatoes will work just fine. Just cube them up and cook them as instructed above. Fingerling potatoes are another great option if you’re able to find them at the grocery store.
  2. The pork chops I used were 1 inch in thickness, try to aim for something similar to be sure the cooking time is accurate and the meat doesn’t dry out.
  3. For the best chops, look for center cut pork loin rib. It has the right amount of fat for marbling and is bone in to ensure a juicy cut.
  4. If you have an extra 30 – 60 minutes and really want to set this dish off, try brining your chops. A brine solution is made with water, salt and other things you may prefer like soy sauce or beer. Basic brine ratio is 1 tbsp salt to 1 cup of water.

What To Serve With Ranch Pork Chops

If you’re not a meat and potatoes type, there’s plenty of other delicious side dishes you can try with these chops! I personally love a nice fresh salad on the side, but if you’re looking for something a little special, try these:

  • Roasted Veggies
  • Creamy Polenta
  • Mexican Street Corn Salad
  • Mediterranean Couscous Salad
  • Brandy Glazed Carrots

And of course, I can’t write a post about a savory meat dish and not recommend my world famous creamy Mashed Potatoes!

Other Ways To Cook

Grill

You can easily make this recipe on the grill! Just cook your chops till they naturally release from the grill, around 4 minutes each side. The potatoes can be wrapped in a little packet made of aluminum foil and cooked for around 20 – 25 minutes.

Storing Leftovers

You can store this dish in a shallow airtight container or wrapped in aluminum foil to ensure it lasts in your fridge for 3 – 4 days. These pork chops can be stored in the same way in the freezer for 2 – 3 months. When ready to eat just allow the chops to thaw in the fridge before warming in the oven.

  • 3 tablespoons olive oil
  • 2 pounds baby potatoes
  • 6 pork chops (either boneless or bone-in will work)
  • 1 ounce ranch dressing mix ((1 oz package))
  • 1 teaspoon smoked paprika
  • 1 tablespoon oregano (dry)
  • 1 teaspoon ground black pepper
  • 1 tablespoon fresh parsley (chopped)

Instructions 

  • Preheat your oven to 400°F . Spray a baking sheet with cooking spray.
  • Place potatoes and pork chops on the baking sheet and drizzle the olive oil over the pork chops and potatoes and toss well.
  • In a small bowl mix together the ranch seasoning, smoked paprika, oregano and black pepper. Rub the seasoning over the pork chops and the potatoes. I didn’t find the need for additional salt, but feel free to season with salt to taste.
  • Place the baking sheet in the oven and roast for about 30 minutes or until the pork chops are cooked through and the potatoes are fork tender. The internal temperature of the chops should reach 145°F (63°C) when cooked. Also please note that all ovens are different, and some may take longer and some may require less time.
  • Garnish with chopped parsley then serve immediately.

Notes

  1. Although I used baby potatoes you can use regular potatoes cut into cubes. I prefer Yukon gold potatoes, but red skin potatoes work as well. Another option would be to use fingerling potatoes, but usually I don’t find these often at the grocery store.
  2. The pork chops used here were 1 inch in thickness.
  3. The sheet pan used is 17.25 x 12.25 x1 inches.
