Easy Crockpot Queso Blanco Recipe

This crowd pleasing queso blanco recipe is going to make your taste buds dance! It’s creamy, cheesy, spicy, smooth, and it has bacon in it! Need I say more!?! Bacon just makes everything better without even trying. And when you combine crispy cooked bacon together with some melted cheese and green chilis, it’s a winning combination that is just begging to be eaten.

But the best part about this recipe aside from the fact that it’s so darn tasty is that it’s so darn easy to make! You just dump everything into your crockpot and walk away. That’s it! Then you come back about an hour later and it’s ready to go, which is why this is the perfect party dip. It requires almost no effort and you can even serve it out of the crockpot if you like! 

And just like my Chile Con Queso, this dip is most often served with tortilla chips or crackers similar to dishes like nachos. But you can also serve it with some homemade Flour Tortillas or even some fresh-cut veggies. It’s amazing on anything. Heck, I’d even suggest pouring it over Grilled Chicken Breast like a sauce and serving it with a side of steamed rice.

Ingredients You’ll Need

Dip

  • Swiss Cheese – This sweet, mild, nutty cheese adds a lovely texture and layer of flavor to the queso. Mozzarella cheese is another good option or even white American cheese.
  • Monterey Jack Cheese – Used in equal parts with the Swiss cheese, you can also use Pepper Jack if you prefer. 
  • Green Chilis – These canned chilis give the queso some yummy mild spiciness.
  • Bacon – Takes this dip to the next level with a bit of porky yumminess. You can also use turkey bacon if you like. For other variations, you could also add some ground beef or chorizo too!
  • Heavy Cream – Gives the dip a smooth creamy texture.
  • Butter – Always use unsalted butter to control the level of added salt.
  • Black Pepper – Use freshly ground black pepper if you have it on hand.

Toppings

  • Tomato – Adds a final layer of freshness and flavor. 
  • Cilantro – Used as a garnish. Fresh parsley is another option if you don’t like cilantro.

How To Make Crockpot Queso Blanco

This tasty dip recipe is simple! I made it in my baby crockpot, but any size slow cooker can be used. The only difference is how long it will take to cook and at what setting. 

Slow Cook The Queso

To begin, put all the dip ingredients into a crockpot. You don’t even need to mix them together. Then turn it on and cook everything together on High for 45 minutes or on Low for 1 hour and 15 minutes. If you are using a small crock pot it will take a little over an hour.

Finish The Dip

After the dip has cooked for a bit and it’s getting super creamy, stir everything together with a spoon. Then cook it for another 15 minutes on Low to give the flavors a bit more time to meld and reach your desired consistency.

Serve And Enjoy

When the queso blanco is finished cooking, top it with some fresh chopped tomatoes and cilantro. Then serve it with some tortilla chips and crackers to enjoy.

What Is Queso Blanco?

In Tex-Mex cuisine, queso blanco refers to a white cheese dip, which is exactly what we’ve got here. But queso blanco, which literally translates to white cheese in Spanish, is also the name of a type of crumbly, soft fresh cheese most often used in Mexico and other Latin American countries.

Can I Make This Recipe Without A Crockpot?

Yes, of course! But the best way to do it is using the double boiler method so the cheese doesn’t burn. To do this, put all the of the queso dip ingredients into a heat-safe bowl that is big enough to sit on the rim of a medium saucepan without touching the bottom. Then bring about 1 inch of water to a boil in the medium saucepan. Next, reduce to medium-low heat to bring the water to a simmer, and then set the bowl on top of the saucepan. Then cook the dip for about 10 to 15 minutes while stirring often.

Expert Tips

  1. Cooked crispy bacon. The bacon needs to be cooked before it’s added to the crockpot. And the easiest way to cook it is to make a batch of Air Fryer Bacon. 
  2. Double the recipe. This recipe makes 4 servings, so if you are making this dip for a crowd you’ll need to double or triple the recipe and use a large slow cooker.
  3. Make it even spicier. Add some diced jalapenos or serrano peppers to the slow cooker along with the other ingredients to make the queso blanco a little spicier.

Storage

Leftover crockpot queso blanco dip will keep in the fridge for up to 5 days or in the freezer for up to 3 months in an airtight container. To reheat, just put the leftovers in the microwave for a few minutes on medium power, stirring it every minute. You can also reheat it on the stovetop over medium heat. However, if the queso has been frozen you will need to let it thaw out overnight in the fridge before reheating.

Ingredients

  • 4 ounces Swiss cheese (shredded or cut into cubes, 115 g)
  • 4 ounces Monterey Jack cheese (shredded or cut into cubes, 115 g)
  • 4 ounces green chiles (chopped)
  • ¼ cup bacon (fried, chopped)
  • 3 tablespoons heavy cream
  • 1 tablespoon butter (unsalted)
  • ½ teaspoon ground black pepper

Toppings

  • 1 small tomato (chopped)
  • 2 tablespoons cilantro (chopped)

Instructions 

  • Add all the ingredients to a slow cooker, no need to mix anything yet. Cook on high for 45 minutes or on low for 1 hour and 15 minutes.
  • Stir everything together with a spoon and continue cooking on low for another 15 minutes.
  • Top with chopped tomatoes and chopped cilantro and serve with tortilla chips or crackers.
