Instant Pot Corn On The Cob

With summer just around the corner, BBQ season is ready for take off! And with all that good grilled meat, you definitely need something to tie it down and what better way than with a perfectly cooked corn on the cob. Trust me when I say but once you cook corn on the cob in your instant pot, you’ll never want to cook it any other way. It’s that easy!

There’s something so comforting about sinking your teeth into a freshly cooked corn and there is no doubt that this is a big family favorite among us all. So, having a quick and easy way to get the corn properly cooked and steaming hot for your family and guests is a definite ‘yes’ for me. And I’m sure, it’s for you too!

Ingredients You’ll Need

7 ears of corn on a white serve plate.

Let’s face it, there’s really only one ingredient here and that is fresh corn!

  • Corn – Shuck and cut in half so they fit in your instant pot. When buying corn on the cob, make sure that the husk is bright green and wrapped tightly against the corn. You want your corn to be as fresh as possible. If the husks are starting to turn yellow or feel dry, avoid them!
  • Water – Cold water from the tap!

How To Make Corn On The Cob In The Instant Pot

  1. Prep and cook the corn: Add the water to the Instant Pot then place the trivet at the bottom. Place the corn on the trivet, cut ends down, the corn should fit snugly. Close the lid, set valve to sealing and set to pressure cook on high for 4 minutes.
  2. Quick release the pressure: After the cook cycle is complete, follow the manufacturer’s guide for quick release. Carefully unlock and remove the lid from the instant pot.
  3. Ready to serve: Transfer the corn to a plate and serve with butter and salt.

Frequently Asked Questions

How to purchase corn on the cob?

When buy corn on the cob, you want the freshest corn you find. Look for husks that are bright green in color, tightly wrapped around the cob and slightly damp. The kernels should be plump and milky. Avoid stems that are already brown, that’s a good indicator that the corn is most likely not fresh.

Why cook the corn in an Instant Pot?

There are many reasons around this process. First of all, you don’t need to keep an eye on the boiling pot. Secondly, there is no worry if the corn is cooked through, and the best part, easy cleanup and very little mess to deal with.

Can I make corn on cob in 3 quart Instant Pot?

Absolutely! Make sure you cut the corn in half, that way you will have smaller pieces that will fit well in the pot.

How else can I serve my corn?

You can add butter and salt to taste and serve the corn this way, or you can even mix it up a little bit and sprinkle some smoked paprika or ground pepper over your corn to enhance the flavors. Other toppings that you can add are garlic butter, Parmesan cheese, cinnamon sugar, chimichurri sauce, lemon pepper or even hot sauce.

Expert Tips

  1. If you wish to cook your corn in husks, make sure to add an extra minute to your cooking time so the corn cooks all the way through.
  2. Buy the freshest corn possible, see above question on “How to purchase corn on the cob?” for best tips on what to look for.
  3. Once you buy the corn, if you’re not cooking it the same day, keep it fresh by storing it in the fridge with the husks on and tightly wrapped in a plastic bag.

Leftovers

If you do end up having leftover corn on the cob, make sure to add them to an airtight container after they cool down and store them in the fridge. They will be good to eat for up to 3-4 days.

Freezing

You can also freeze your cooked corn on the cob, just make sure you freeze it in airtight containers or freezer bags.

You can also freeze uncooked corn, by flash freezing it first. Simply place the corn on the cob in a pan or baking sheet, husks removed, place the pan in the freezer for a couple hours until corn is frozen. Remove the corn on the cob from the freezer, and wrap it tightly in plastic wrap, freezer bags or airtight containers and freeze.

  • 6-8 ears of corn (shucked and cut in half)
